Buttermilk Biscuits

I made Beef Stew last night, and with it I served homemade Buttermilk Biscuits.  Here’s the recipe – Enjoy!

Buttermilk Biscuits

4 C. flour
2 Tbsp. baking powder
1 tsp. baking soda
1 tsp. salt
1 Tbs. plus 1 tsp. sugar
2/3 C. cold unsalted butter
1/4 C. melted unsalted butter
1 1/2 C. buttermilk

Preheat oven to 450 degrees.  Sift dry ingredients together in a large bowl.  Cut in chilled butter.  Stir in buttermilk.  Transfer to floured board and knead briefly.  Roll out 1 inch thick.  Cut in rounds and place in greased 9 inch square pan.  Arrange with sides touching.  Brush with melted butter.  Bake until golden, about 25 minutes.

(I use my food processor to make this recipe, and it works great!  It makes it so easy to cut in the butter and the buttermilk!)

If you want to make a smaller batch, here’s the following breakdown for using just one cup of buttermilk:

2 2/3 C. flour
1 Tbsp & 1 tsp. baking powder
2/3 tsp. baking soda
2/3 tsp. salt
2 2/3 tsp. sugar
4/9 C. cold unsalted butter
1/6 C. melted unsalted butter
1 C. buttermilk

Yes, I know some of the fractions are odd, but I just eyeball them, and it’s always turned out fine.
